Gluten Free Goodies


I have been living gluten free for 5 years now. It wasn't as difficult of a transition as I expected it to be. Although, I wouldn't say it was easy either. Today, there are more and better options out there and it's much easier to even eat out. Of course, there's an added cost and time that goes into it. So why do I not eat gluten even though I don't have celiac's disease? I even tested on the low end on a blood test for the sensitivity to gluten. Simply put, I feel better not eating it. Specifically, less anxious.

Why do people have issues now with wheat when they didn't 30 years ago? According to Dr. Davis (wheat belly fame), the vast majority of wheat grown and harvested today is only a distant ancestor of the real wheat that your forebears ate. Over the years, wheat has been genetically modified in order for American farmers to produce a high-yield crop of dwarf-size plants that was never tested to see if it was healthy for human consumption. While mass production of wheat has allowed us to feed more people, it has also resulted in producing a “supercarbohydrate” wheat plant that is far less healthy than its predecessor. Our bodies have no idea how to process this new, highly addictive, grain. In reality, no one should be eating it. I hate that gluten free is a fad now because I think it takes away from the legitimacy of not eating it. I also hate that people don't see this as an opportunity to eat more clean. Just because something is gluten free DOES NOT mean that it's healthy. However, I understand that there are basics that people still want to eat. So, I have comprised a list of my favorites. It's taken me years to find these products but through the process of trial and error, I definitely have my favorites:

Crackers: Mary's Gone Crackers Real Thin Crackers (woodmans)

Bread: Northhouse Bakery (fresh thyme)

Oats: Bob's Red Mill Gluten Free Oats (woodmans)

Cereal: One Degree Foods, Cacao Crisps, Chex, Cheerios (woodmans)

Noodles: Banza, Tinkyada, Outpost quinoa pasta from bin

Pancake Mix: Lonesome Stone Milling Company Mix (outpost)

Granola: Purely Elizabeth (target, woodmans)
