Roasted Veggies

I'm gonna make this post short and simple. Roasted veggies are so easy to make and more tasty than some other ways of preparing vegetables. I use broccoli as an example below, but you could substitute for cauliflower, brussel sprouts, asparagus or carrots.

* Vegetable of choice chopped into the same size pieces
* Spray with evoo, lightly
* Season with salt and pepper. If you have any other blend that you like you can season with that as well.
Set oven to 400 degrees.
Line baking sheet with parchment paper.
Chop veggies, spray, and season.
Place on cookie sheet.
Place in oven for abut 20 minutes, flipping halfway through (time may be shortened for asparagus).
Enjoy on their own, on salads, dipped in hummus, etc. The possibilities are endless.
