Happy Thanksgiving: Easy Vegan Gravy

Somedays, i will be walking in the house and look down at my feet and think, "Wow, you have carried me for 42 years!" It's easy to take for granted, especially, if we are physically not feeling the way we would like to, how amazing our bodies are. Today, I am thankful my body and the miraculous things it does, on a daily basis, to keep me here. Onto less heavy stuff, Vegan gravy in a pinch....
This recipe works well and tastes good. I have tried it with a mushroom broth and a vegetable broth. Even mixing them at times and it's still yummy.
Easy Vegan Gravy

*2 tbsp. Earth Balance vegan butter
*2 tbsp. gluten free flour (I used rice flour)
*1 1/2 cups of broth. I usually use Pacific Foods and try to buy low sodium. Buy whatever brand you choose
*Poultry seasoning, salt, and pepper to taste
Melt butter and flour in pot and mix until it get a little darker in color.
Add broth and whisk until thicken. Add seasonings per your taste.
You could also add diced onions and garlic and sauté these before starting your flour/butter mixture.
Make this ahead of time or in a pinch if needed quick. It comes together in 10 minutes and leftovers can be frozen.
I will be putting this atop my mushroom stuffing (recipe to come later) and mashed potatoes.
