It Really Works!


I am always doing research, reading, and watching documentaries to further educate myself on the benefits of plant based nutrition. Sometimes, just when I think I know it all, I learn something new. Don and I watched a documentary about 2 months ago that said that many vegans still have the same issues meat eaters have because they continue to use oil. I thought olive oil was my friend?! Mediterranean diet, right? Wrong! New research is coming out about the Mediterranean diet saying that it's not the olive oil that makes it healthy for the heart, it's the copious amounts of fruits, vegetables, and grains.

I had just had some blood work done for my yearly checkup and things were good: total cholesterol was 165 (down from a previous 242), good HDL, lowerish LDL. However, I love to experiment, so I thought that I would drastically limit my intake of oil and take another test to see the difference. I used a time frame of about 5 weeks to do so. Now, I love to use olive oil. I roast veggies in it, sauté in it, and use it in salad dressings. So, I had to change it up. I found that you can spritz veggies with water and season them the same for roasting in the oven. I lightly steamed veggies in vegetable broth on the stove and let the water evaporate out to get a little color on the veggies. I also used a squirt of lemon or lime atop a salad. Once in a while I had an oil based dressing but very sparingly. Drumroll please..... Total cholesterol came back 135! It dropped 30 points in a little over a month. I'm not sure there's a medication out there that can produce those results. My LDL also lowered as

well as my blood sugar. It really works! It works if you do the work. If you think you've tried everything and nothing has worked, you haven't...until you've taken on eating plant based.
